By far, the most important addition that will make your iPod experience better is upgrading your headphones. While studio quality headphones can cost upwards of $500 there are several different companies creating high-end headphones at less ridiculous prices made exclusively for digital audio players. The company that is leading the way in this niche market is Shure Electronics. Their i2C sound isolating headphones are fantastic. First off, the cords are designed to go over your ear and behind your back so they don't ever get in your way. They sound amazing, and come with a variety of different foam and rubber cushions making them fit perfectly in the ear. They cost about $100 and are well worth the investment.
