The Belt favorite, Standby, has a new chef and she’s gearing up for the holiday season!

California native, Rebecca LaMalfa, spent years convincing her husband (and chef at the Foundation Hotel’s Apparatus Room, Tom Lents) it was time to move back to his hometown Detroit. The former ‘Top Chef’ contestant, fell for the city after hosting a series of pop-ups at Revolver. When she was offered the head chef position at Standby, she couldn’t say no.

I love the flexibility the space offers. It’s tiny, it’s cute we can do whatever we want with the menu and space. The ability to make it my own is awesome.

It also helps that the kitchen is in the basement because the self-proclaimed hermit hates loud noises. Rebecca loves the holiday season and she’s looking forward to infusing a seasonal flavor to the ever evolving menu.

I’m a farmer’s daughter so we do huge harvest stuff. I already have a bunch of squashes coming in and an apple cider sour cream donuts coming on the menu soon.

Christmas is her absolute favorite. Her first pop-up in Detroit was a highly researched Dickens inspired Cratchit/Scrooge family meal and she’d love to host another and include a few items on Standby’s menu. She will also be making cookies for alley neighbor, Skip, during their month long pop-up event Miracle.


STRAIGHT FROM THE CHEF

rebecca’s favorite: beet salad + the Cure All (Bombay Sapphire, green apple, orgeat, lemon juice, watercress)

  • The Waygu strip  is tender  and fatty but not too fatty with local corn and beet succotash with chiles from New Mexico that get folded in so it’s a little spicy and a roasted eggplant chipotle puree
  • English-styled fish and chips made with sustainably raised cod. The home-made fries have a pillowy middle and are served with a malt vinegar aioli
  • If you like pasta our hand-rolled gnoochi is amazing
